No Bake Holiday Cookie Recipes

Last week, it was all about delicious, healthy and non-alcoholic holiday drinks. This week, Kayla Little, RD, LD, CpT and FitRx Wellness Director offers up two amazing recipes for no-bake cookies.

Vegan, Gluten-Free No Bake Cookies Recipe


  • 1/2 cup agave nectar
  • 1/3 cup Dutch-process cocoa powder
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut oil
  • 1/4 cup almond butter
  • 2 cups gluten-free oats
  • 1/3 cup shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt


1. In a medium saucepan, mix together agave and cocoa powder. Heat over medium heat until combined. Stir in almond milk and coconut oil and bring to a boil. Continue stirring and boil for one minute.
2. Remove pan from heat and stir in almond butter, oats, coconut, vanilla extract and salt.
3. Using a spoon or cookie scoop, drop cookies onto wax paper. Let the cookies set up for about 20 minutes in the refrigerator before serving. Refrigerate the cookies in an air-tight container for up to one week.
(Note: If you don’t want to make vegan cookies, you can use honey instead of agave.)


Skinny Chocolate Peanut Butter No-Bakes


  • 1/2 cup creamy peanut butter (or crunchy; if using natural style peanut butter make sure it is not oily)
  • 1 small very ripe banana, mashed (about 1/3 cup)
  • 1/3 cup honey (or maple syrup or agave)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup milk (almond, cow, soy, etc)
  • 3 cups quick-cooking oats* (not whole rolled oats)
  • 1/8 teaspoon salt
  • 1/3 cup mini chocolate chips (optional)


1. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
2. Melt peanut butter and mashed banana together in a large skillet over low heat until fully melted and combined. Remove from heat and mix in the honey, cocoa powder, milk, oats, and salt. The mixture will be thick and fudge-y.
3. Drop cookie dough (about 2 tablespoons per cookie) on the baking sheet, molding the cookie into desired shape. Press a few mini chocolate chips onto tops, if desired. Place in the refrigerator for at least 2 hours before enjoying.
